Unfortunately, due to the budget and a menu that was unexpectedly changed a couple of times last week this Monday will include meat. I have pork that I need to cook before it turns and tonight is my last option for doing that. And in our current economy we are like a lot of today’s families and cannot afford to throw a meal out to adhere to Meatless Monday this week.

Now, next week I will be going back to the Meatless Monday schedule as grocery shopping will be this upcoming weekend.

So, as you can see I did not get back on Friday to update with all new green snazzines. I did however have a great weekend with my family after catching the very early Dawn Patrol of the Reno Great Hot Air Balloon Race on Saturday. Moving on…

Last week I introduced my family to garden burgers. Our teenager was less than thrilled and didn’t get through her burger so I gave some thought about what her favorite dish is and how can I go meatless with it. Luckily her favorite meal is Spaghetti, a dish that is very easy to create meatless. She knows the sauce will be meatless tonight and she seems to be open to it so far. My plan is to make the sauce a bit chunky with extra diced bell peppers, mushrooms, onions and tomatoes. Organic spring mix salad and garlic bread will also be served.

Meatless Monday, went pretty well last week and we are going to branch out a bit more this week. I started off by serving some creamy potatoe soup. This week, I am going to use some Garden Burgers, crumble them and make my own veggie hamburger helper type dish with organic Mac-n-Cheese.

So far, we have the adults on board for adding more of a vegitarian menu to our diets. Normally, I would serve meat, one side and then a serving of salad or veggies. Now I am going to start making the main part of our dinners to be centered on veggies and grains, while still keeping some meat on the menu. Being a former vegitarian, myself I know what it can do to the body to make the switch to quickly. Chicken, Fish and Pork will still be served for a while, though red meat as been erradicted from the apartment. The kids aren’t that thrilled at this point, so another part of my goal is to get them more excited about veggies and eating more actual fruit instead of craving fruit flavored processed foods. We have one that loves veggies, one that only loves veggies when covered with cheese and one that loves veggies covered in Ranch while favoring fruit flavored snacks and deserts without the fruit.

I am going to jump on the Meat Free Monday bandwagon and give it a spin today. Tonight for supper, I’ll be making a Potato Soup from a base of dry mix by Bear Creek.

Over at Allie’s Answers, she is going with a recipe for Black Bean, Mushroom and Quinoa Stuffed Pepper’s which sounds really good.
